Sometimes called shell beans, these Organic Cranberry Beans are not just beautiful to look at, they are delicious to eat. Great with pasta or sauteed with diced tomatoes Organic Cranberry Beans have a unique slightly nutty taste. They make excellent beans in soups and stews. For basic preparation, pre-soak beans over night. cover beans with water in a 3 - 4 quart pan, bring to a boil and simmer for 15 - 20 minutes. When done, drain and season with salt and freshly ground pepper. They can be served hot with butter or olive oil, but are particularly good served at room temperature with olive oil, lemon juice and chopped fresh parsley. This is similar to the way beans are served in Italy as part of an antipasto tray and makes a great addition to a mix of cheeses, olives and sausages for an appealing appetizer. Organic Cranberry Beans can be soaked overnight and the simmered under water or stock with vegetables and or meats. Their meaty, chestnut flavor makes Organic Cranberry Beans a wonderful main dish and a perfect side dish. Organic Cranberry Beans make an excellent cold bean salad, soak and cook them as you would any other dried bean (approx. 30 minutes cooking time) and then toss them with olive oil and a little Italian salad dressing, or lemon and herbs.
