- Water hyacinths (Eichhornia crassipes) are one of the most visually appealing plants in the water garden. In the spring, flower stalks that grow six inches (15 cm) above the foliage emerge from the centers of the rosettes, and by the end of the season, each plant can have as many as 20 beautiful purple flowers. The blossoms are attractive as cut flowers that endure until the fall.
