Black Pepper Powder, Piper nigrum, Peppercorn, maricha is native and extensively cultivated in Kerala, on the southwestern coast of India, and in other tropical regions. The fruit harvested from a flowering vine, while unripe and dried out to make black pepper. The full ripe fruits are later harvested and dried to make white pepper. Once dried the fruits are called peppercorns, these are then ground and used for their flavor and used in traditional medicine throughout the world. It is the most common spice added to cuisines around the world, and often paired with salt at meal tables. Unlike chili peppers where the flavor comes from capsaicin, its robust flavor comes from the chemical compound piperine.
