Block “2B” is on the western most tip of our Estate vineyard and has consistently produced the most impressive wines on the property. The quality of fruit allows us to utilize a wide array of winemaking tools to further enhance the depth and intensity of the resulting wines. Block 2B was used exclusively for the 2010 CV Reserve Cabernet Sauvignon with one fermenter selected to receive extended maceration on skins. In fact, the wine was left on skins, post ferment until the middle of February 2011. The textural changes in the wine were amazing. The very sophisticated fruit flavors gained another dimension, adding to the many layers of complexity. Oak handling for this wine was carefully reviewed and, while all the wine was transferred to new French Oak barriques for 14 months, a large portion was allocated to a second term with another batch of new French Oak barrels. Certainly an unusual practice but the wine’s quality allowed for perfect integration of fruit and oak. The grape and oak tannins combine seamlessly, the silky smooth texture is supported by great fruit weight and length of flavor. The wines structure remains tight but careful cellaring will greatly enhance its approachability.
